Organic Satipo

Only one cooperative is responsible for the production of the cocoa we buy in the province of Satipo in the Peruvian Rainforest (Selva Central): The "Asociación de Productores Agrosostenibles Villa Ecologia Perú". A total of 200 farmers are involved in the production of this cocoa, who grow and process the cocoa beans in a sustainable, ecological manner. In addition, this preserves Peru's rainforest area.

The cocoa is fermented in boxes for four days, depending on the weather. Each farmer realizes the post-harvest processes individually.

The cocoa beans are exposed to the sun on drying tables until they reach a maximum humidity of 7%. It usually takes 72 hours for the beans to dry from the sun.

Aromatic profile

This cocoa has a very nicely rounded, intense cocoa aromatic and nutty flavor. These flavors are supported by fruity and slightly floral nuances. The bean is fine, delicate, low acidity and can reach a very short and bitter note in the finish.
