A total of 200 farmers are involved in the production of this cocoa, who grow and process the cocoa beans in a sustainable, ecological manner. In addition, this preserves Peru's rainforest area.
The cocoa is fermented in boxes for four days, depending on the weather. Each farmer realizes the post-harvest processes individually.
The cocoa beans are exposed to the sun on drying tables until they reach a maximum humidity of 7%. It usually takes 72 hours for the beans to dry from the sun.
